What's New?

I have added a special dish of mine, and it is not really wild game, but since it is my website I guess I can put on it what I want. It is a dish I always enjoyed as a kid when my mother made it. It is Brawn aka Head Cheese. You should try it out.

Cooking wild game dinners have become a passion of mine. I have been hunting birds and white tail deer for the past 30+ years and until about 10 years ago my wife, Vibeke had also been kind enough to do all the cooking of the wild game after I had prepared the meat. I make all the deer meat cuts and package the individual pieces in freezer bags ready for use. One day I decided that it might be fun to try to cook a wild game dinner. Since then I have developed a passion for cooking all the wild game dinners.

Today you will find videos of the first 33 dinners Vibeke and I have filmed.  The 33 dinners includes 21 venison dishes,11 pheasant dishes, and a dish with our favorite game bird, woodcock. These videos will show you excatly how to cook wild game. I have naturally included the recipes for these wild game dinners as well. Just go to the Wild Game Recipes' page and decide which video and recipe you are interested in and click on the link. I just tried out a Sous Vide water oven so you may want to go to the pheasant recipe describing how that all worked out. Over time you can expect to find recipes for all types of birds and many venison dishes (including a recipe for Deer Heart a la Danish) on this site. With each wild game recipe you will also find the cooking times for wild game that I am using. As a bird hunter I often am successful in bagging chukars, quail, pheasants, ducks, grouse, geese, and woodcock so these birds will appear in upcoming videos.

My first experience cooking was a boy scout. My Mom was too busy to teach my brother and I to cook, she would rather have us help in the corner grocery store. Some of us boys decided we needed to be better prepared than just what the leaders told us so six of us teenagers took an evening cooking class. Even though that was many moons ago I recall the rudimentary knowledge about cooking concepts we were taught in that evening class. So for the more than the past 10 years I have been doing the cooking. Over the years we have had hundreds of birds and about 40 white tail deer.

As I get deer and birds in my freezer I will be able to make wild game dinners using venison stew recipes, pheasant recipes, etc. There will be some simple recipes and as time goes by there will be some more complicated wild game recipes. The pheasant with raisins' recipe is one I use when I only have a little time and we want to have pheasant that is very tasty throughout. This pheasant dinner can be made in about 30 minutes. You'll also learn that the venison patties is a staple in our household every weekend.
